Pickled Granny Smith Apples
Pickling Granny Smith Apples is easy and will add a sweet tart flavor to your next burger. These pickles are out of this world surprising good. I came up with idea when I was developing the flavor profile for my bison burger. I wanted something that would cut through and add to the flavor of this rich burger. Adding Pickled Granny Smith Apples did the trick and then some!
Granny Smith Apples are firm and are a great candidate to hold up to the pickling process. I am certain this technique would work with any firm flesh apple. I would like to give Fuji’s a try, more sweetness.
2 large granny smith apples, cored and sliced thinly and halved
1 cup champagne vinegar
1/2 cup cane sugar
1 Tablespoon kosher salt
Toss sliced apples with about a tablespoon of sugar and about a tablespoon of kosher salt, set aside for about 30 minutes to allow apple to soften. Mix remaining sugar and vinegar, stirring to dissolve the sugar. Pour over apples and refrigerate for a least one hour before using. These gems will last for up to two months.
